15 – 20 apples peeled, cored, and chopped rough is fine but all the same size
130ml apple cider
64g brown sugar
3 tablespoons lemon juice
1 teaspoon cayenne pepper
1 teaspoon cinnamon
1 teaspoon crushed red pepper or2-3 fresh chilli
Put the apples, chilli and lemon zest and juice in a pan. Cover and cook for 5 minutes, stirring occasionally, until the apple is soft. Add the sugar and butter. Cook on a low heat for another 5 minutes, stirring often, until pulpy to the applesauce texture you desire.
Want more heat? Double the portions of cayenne and crushed red pepper.
